냉면 (naengmyeon, 冷麵)

Cold noodles in ice water with vegetables and an egg, often served in the summer as a refreshing meal. The noodles typically are cut up with scissors after being served, and you can add mustard and vinegar as you like. There are many possible variations, some of which include a slice or two of meat; it is also normally made with chicken broth.

The two most common naengmyun dishes are 물냉면 / mulnaengmyun (pictured on the left) and 비빔냉면 / bibimnaengmyun. Mulnaengmyun is typically served with a slice of beef, similar in taste to roast beef. Bibimnaengmyun however is served mostly with sliced cucumber and spicy gochujang sauce.
