Kongnamul muchim

Kongnamul muchim (콩나물 무침)

This dish is a common feature of many a Korean meal. The name 콩나물무침 means "seasoned bean sprouts". The texture is crisp, and the flavor is typically very light. The bean sprouts retain moisture, so you will also taste water in this.

General recipe:

  • Wash the bean sprouts and boil them for a short time.
  • Chill the sprouts by placing them in a bowl of cold water.
  • Drain the water, and dry the bean sprouts.
  • Create a mixture (양념) with the following ingredients: 참기름 (sesame oil), 소금 (salt), 고춧가루 (red pepper paste), 깨소금 (sesame seed salt), 마늘 찧은것 (minced garlic). The mixture may also contain thinly sliced leeks (파).
  • Slowly add the mixture to the bean sprouts, being sure not to overseason them. The surplus mixture can be saved for later use.
