손간짜장면 (son-kan-jjah-jang-myeon)

As jjajangmyeon noodles are usually made from machines, son-jjajangmyeon (손 meaning 'by hand') consists of noodles made by hand and is therefore reputed to be of a higher quality. The sauce has been boiled and then fried, reducing it to a paste.
