Bogeum Jari (보금자리) is a vegetarian buffet restaurant in Icheon, west of the urban center, a 4600-won taxi trip from the bus terminal or 1400 won by local bus. The lunch buffet is 12,000 and they are open for dinner too. The selection is good and includes some vegetarian mock meats, and the presentation is nice as well.
